I'm currently incubating my first batch of mushrooms via the PF Tek. My substrate jars were inoculated about 26 days ago, and are fully colonized. I was wondering if I could put off the birth of the cakes another week, making the birth of the cakes 5 weeks (35 days) after the inoculation, without any damage being done? If anyone could give me some knowledge on this particular situation, I love you Thanks!

It sounds like you are talking about an extra nine days.
We usually give cakes an extra week after 100% colonization for what we call a consolidation period.
This leave the cakes closer to being ready to fruit, and leaves you less time in the Fruiting Chamber where you must worry about the maintenance of conditions.
I think that nine days should be fine.
Are any of the cakes pinning in the jars?
You might end up with a few small and dense in-vitro fruits, but this is not a problem.
Take care,
JD

you want horticulture grade verm and you can substitute dark rye flour or blend/grind up wild bird seed into flour, pretty much any whole grain will work ground into flour.

This is very true. "Grinding your own" (and I'm going to coin that phrase, damnit!) grain flour is superior to buying already ground, brown rice flour in bags. Rice bran is also a cheaper, superior alternative to ground pre-ground and bagged, brown rice flour.
A grain's husk is where most of the grain's nutrition is located. Grinding your own grain into flour and buying rice bran are more nutritious due to the fact that the grain's husk isn't removed. Rice bran can also be purchased in 40-50 pound bags for 30-40 dollars.

Source Vermiculite.
Fine vermiculite is not exclusively needed.
Coarse and medium-coarse vermiculite work great.
My personal favorite being medium grade vermiculite.
Seeing as how this is your first grow and you'v already stated you don't want any problems.
Don't deviate from the original teks, especially on your first few go-arounds, at least.
Being that your inoculations are MS, there's really no way to tell how much they'll yield.
One thing that you can control that will have an affect on your yield is climate/environment.
The closer to ideal conditions for fruiting you can constantly provide for your fruiting cakes, the more they will yield.

Thanks sounds great so whole grain wheat flour would work? I have a nice climate control system worked up for the room as well as an hepa air purifier and humidifier if the peculite does not do the job. I am gonna steralize the fridge for the dunk and roll and use distilled water. I am thinking nothing can go wrong. plus i do 4-5 hours of reading forums and research a night(already has become and obsession and havnt even started yet). any little tips and maybe not so well known secrets would be greatly appreciated.

It is not necessary to cold shock cubes, they are a tropical strain.
As for the flour if you don't have a blender or a coffee grinder, you could just get the whole grain brown rice and beat the heck out of it with the bottom of a coffee cup, glass, meat mallet, clean hammer, your forehead,"JK", just make sure that you get it in as fine of a powder as you can unless you use an alternative. Putting it in a thick ziplock helps unti you beat little holes in it and it starts coming out the holes. I would say a stone counter top or a big cutting board and something to scrape it up with would work if you beat on it for a few hours lol.

Yes, small pins are growing in the jars already... Will this be a problem come "birthday" for the cakes? Should I proceed with the Dunk n Roll method just as if there were no mushrooms already on the cakes?

If the ones that have pins are fully colonized, birth them, and you will have some fat ugly invitro babies in a week. The fat ugly children need love too though, don't discriminate...
That will make your second flush come sooner too maybe. My best shroom was an invitro one, he was very potent and my biggest I got.
