They are drying out. Direct misting is not suggested.

Still having some problems with these, I'm guessing that the only possible cause is the humidity (its around 65%). Temp is about 15 deg C.

The mushrooms looked fine and healthy when forming but then they just seem to stop growing and start to turn yellow and dry up. I've been giving them plenty of water (spraying about 3 times per day) and I've opened a big window nearby to make sure they get plenty of fresh air.

Thanks for any help

hahaha, i thought you were working with straw blocks, what the fuck is that?!  A large part of your problem, me thinks, is that those straw blocks in the first post look as if they've barely had chance to colonize...
From the new pics, it seems the substrates are drying out.  At this point, you probably want to give them a good dunking.  Submerge them in water for 12-24 hours, then replace them in fruiting conditions (AKA high humidity, right temps, etc.).
Sounds like its too late also, but you might want to do a little shopping in the hygrometer area of things.  He was saying the one that costs $20 was spendy... not really so.  You can spend a pretty penny on a nice, accurate hygrometer, or go cheap and you'll get cheap results...  And a word of warning on electronic ones: electronics don't work well in high humidity environments, even if they were manufactured to do so (especially these cheap ones...)  i went through 3 $20 digital hygrometers before i learned my lesson, and now have a $20 analog one that works beter than those ever did...

Brown is dry enviroment... They need more spraying. More frequently i mean, because it seems 3/day are not enough...
