My friend has a presto 8qt pressure cooker and no matter what he does the karo always caramelizes! He has tried heating up to pressure very slowly keeping the heat as low as possible, he has tried putting cloth underneath the jars (there is a heat spacer in the bottom.) He tried putting empty half pint jars underneath the karo jars inside the pc with minimal success, could only pc for 6 min though. It didn't caramelize but it did contam a few days later. My friend Needs help!! Has anyone had success microwaving!?

It sounds like you`re doing something wrong there. I`ve never caramalised my honey water. I just get it up to pressure and let it go for 45 minuted with my grain.

I know he's doing somthing wrong because if he wasn't doing anything wrong then he wouldn't have asked me to post this question! He wants some help, if anyone could offer some HELP instead of obvious statements or smartass comments I'm sure he would be very greatful.

Well my point was that he naturally is making a mistake somewhere other than during the PC process?? Think about it. Is he possibly using too much honey??

I use 1 tsp. Karo per 100ml water. Is that correct?

that sounds fine. Very strange. I use one tblspn per 100ml. sometimes more sometime less. are you not PC it to a pressure thats maybe a bit high. If you`re battling try just boil sterilising with a normal pot?

Yeah it's yellowed after it comes out of the pc. The sugar has started to cook. I read that this can cause the myc to mutate and grow abnormally. I read this in Nan's karo tek. The reason for the karo is so the solution is clear and contams can be identified. Will just boiling the solution kill all the contams? Instead of pcing. I dont think it is possible to exceed the 15 lbs of pressure with my pressure cooker. It uses a weight that is suppossed to keep it at no more than 15 lbs.

Dude thats a dumb question, even in the pf tek it explains you can boil jars. Thats an obvious answer. it could have been answered with a search..

"Dude" The pf tek doesn't say anything about the karo tek. The pf tek says you can boil brf/verm substrate. In the karo tek it says to pc, it doesn't say anything about boiling. Have you personally tried boiling karo water successfully? If you have could you tell me if it worked without contaming. If you haven't then "dude", don't post DUMB replys and SEARCH for a brain cause obviously you can't read. Earlier in this thread I asked people not to send me stupid replys and obvious comments, too bad there isn't brail on the coimputer screen for you but just try and sound out the words, cause my friend is only asking for help not arrogant coments from you "Dude". Boomin, I regularly PC my karo jars for 20-30 minutes @ 15 lbs. and never suffer from any caramelization issues. I use 1/2 tsp. of light corn syrup for every 100ml of water.

It might also have something to do with the type of water your friend is using. Try using distilled water. When you have water with minerals etc. in it, it raises the boiling temp and may be allowing it to get too hot.

I don't think so, though. If it's getting too hot, any sugar in the jar would begin to caramelize. Are you using a towel on the bottom of the PC to keep the jars from scorching?

This sounds wrong to me. At sea level, water temperature cannot exceed 100*C when it's boiling. This is because it is converted to vapor at that point. Boiling water under pressure raises the temperature where water turns to vapor.
