Grain Problems
    #917012 - 09/29/02 03:02 PM (21 years, 6 months ago)

I am having some serious grain problems.

1) First off, some weird yellow shit collects in the bottom of my jars.  I am pcing them enough and washing once before but I still get this nasty sediment type stuff in my jars.  When the mycelium takes it over, it turns yellow too!

2) They are taking forever!  I have my jars in an incubator but they seem to be taking so long to colonize.

Also, please don't respond unless you use grains yourself.  I don't like it when people say "well I think it sounds like some contams i heard about."  thanx

Do the jars smell at all?

That kind of gel-like substance?  That's a kind of goo that will cook out of the rye if there's too much water.  The colored water will harden as it cools, forming a slimy liquid-like substance.  Just use a bit less water than before.  I think its the gluten that will cook out of any grain, thats what makes gravy thick.

No smell other than the normail mycelial smell.

Schmoppy's description sounds right. Does the mycelium have a hard time colonizing this "gluten" substance? Yeah, a batch was made today and simmered first to eliminate as much of this problem as possible.

If there is no adverse smell, there's a good chance it's overcooked, overhydrated, and bursted grains.

I wash my grain in plenty of cold water after simmering to get all the goo off, then leave it to drain for 15 mins. Also I add some vermiculite to soak up excess moisture.
