PC'ing and graduall cooling

i read that after you PC jars..... its a good idea to leave them sealed insid the PC and do not break the seal of the PC. why? something to do with condensation? I cant remember. I am very intrested to know the mechanics of this.

for any of you who are replying to this..... How much time, how many hours, after turning the flame off, do you break the seal of the PC and remove the jars?

well if you maintain the seal the pressure built up you are basically preventing any contamination from entering the jars possibly from the air. It`s just one extra step to ensure sterility.

I good time would be when the pc seems cold to the touch. That`s wy most ppl do their pcing at night. Otherwise quite few ppl put their entire pc jars and all into the freezer.

I usually let mine cool overnight. If I am anxious, I'll still wait till the cooker is cool to the touch. This does help prevent "dirty" air from being sucked into the jars as they cool. In most PC manuals, it isn't recommended to use the running water method to cool the cooker when doing canning. This can often cause the jars to crack.
