No help here, just an observation. When you see funny colored mold growing on anything, you are seeing the reproductive part of the organism. The parts that you don't see have grown enough to produce a fruiting body. Reproduction is the last stage before death in its life cycle. So don't try to pick off the mold you can see. Either live with contamination or throw it away. The same goes for moldy bread.

It sounds to me like your casing was WAY too wet. Don't spray it down so often. Add moisture only when the top layer looks a little dry and then add just a light misting.
