scrape and dunk or dunk and scrape?

i have a brf cake that has not colinized in one spot about the size of a quarter  some of the jars are pinning  i plan on removing the pins and dunking and rolling them  and starting my fruits!!!  should i scrape before i dunk? what suggestions do u have? thanks all for the amazing advise!!

i dont have a cam :-( i went ahead and scraped then dunked i tossed 2 of my cakes with pins on them one looked contaminated and the other the mini mushies had a bluish on them so wasnt sure if it was brusing or what but would rather toss if in doubt....still have 10 cakes i am so excited to see my work paying off....

its hard for us to tell with out a pic my advice would be search for bruising and compare. if it just blue and wasnt there before then it probably just bruising.

Invitro fruits always bruise.  Also, never remove pins when you birth cakes.  You tossed out perfectly fine goods.

Maybe the cakes were good, but I'm glad to see a newb who understands that it's better to lose two cakes that are beyond that individual's ability to determine contamination or not for the sake of saving the remaining ten.  RR is probably correct that the cakes were good.

Take Q-tip and rub the blue areas lightly.  If the area is contaminated, you'll easily rub some of the coloration off the cake and onto your Q-tip.  If the cake is good, it will not show on the Q-tip, but you will see a little bit more bruising in that area (as a result of the physical contact- nothing to worry about).
