temp probe switch and plugin stovetop burner for pasteurizing????

so, i have this plug in stove top type burner. I know i cant pressure cook with it, cause it only gets my big cooker up to 5 lbs. but that is more than hot enough to pasteurize. what i want to do is hook up some sort of temp probe switch to put in the pot and keep my temp range between 165 and 175 so that i can pasteurize oven bags of poo for a few hrs. anybody know what these kinds of switches are?
maybe find something that will work for this at a hydro store?

I think you were asking for an actual switch that will turn off your heater when the water reaches the right temp and then on again when it falls bellow.
A switch like one of these would work.
You'd have to do a bit of wiring and it is pretty pricey.
However the goal of pasteurization is to keep the substrate at a constant temp. If you set up the switch it will only flip off after the temperature has been exceeded which is not a good thing. Then it will switch back on after it has fallen below the temperature you want. Then when it turns back on it may take your hot plate a while to get back up to the desired temperature causing even more fluctuation.
I'm assuming your burner has some sort of rheostat selector switch where you can turn the heat to a high medium or low setting, or something similar. If this is the case I would recommend taking the time to one day slowly bring a container of water up to temp. Once you find what setting holds the temperature just right mark the knob with a sharpie so you know where that point is. Then in the future all you have to do is set it and wait. That is what I did with my oven roaster.

yup set it and forget it.
a switch like that I am going to use for making dry cured meats. I got a top dollar one can reach most any biological parameter. useful in complex mycology research but useless and expensive for a pasteurization unit.
for my beer mashing with the same enzyme activity and time it has to be a rheostat selector switch as the control. all else it too many violent swings in the core resulting in uneven control of the symbiotic element and leaving only the introduced element which you may have no proper control over.
I vote move this thread to advanced and bring the enzyme and temperature argument where it belongs.
I for one would love a pure culture of said enzymes to fit into my theory for the most difficult to cultivate.
