a few questions--need answers, losing internet soon

hey guys, sorry for the muliple questions, but i have a million things to do today before i lose the internet soon. i have done some searching...
1. i have 2 trays of rye/coir+ that have been in the greenhouse for 9 days with absolutely no signs of fruiting at all. the humidity dipped a few times over night until i got it right recently. would you suggest removing the trays, dunking, and casing, or just keep waiting? i think theyve dryed out.
2. is there a horse manure pasturization tek that does not involve the use of a thermometer? i have some poo, colonized popcorn quarts, coir, gypsum, verm, etc. i have no way to get a thermometer right now.
3. i have 12 cakes that were in the greenhouse for 3-5 days while the humidity would sometimes be at 95+, then other times dipping to 80-85%, then three days ago i made a shotgun, and they are now saturated. they are not doing a thing still, and some have bluing that i am assuming is from drying out. do you suggest that i also dunk these for a night and retry?
thanks in advance for the help. i can work on getting pics online today if that would help, but time is of the essense...

You can redunk your cakes, blue bruising is a sign of drying out.
Unsure of your bulk substrate however.

Some times I feel that people make to much of pasteurizing. All you need is an oven, a meat thermometer (really not needed), roasting pan and some roasting bags. Preheat your oven to 350 and fill your roasting bag and place flat in your roasting pan. What you want is a layer substrate that is about three to four inches thick that's in the roasting bag that's in the button of the roasting pan. Heat in the preheated for a hour. You can test with meat thermometer to see if you have hit 180f. But do this at the end, you want to trap in the steam that will be generated in the bag. This will help you from drying out your substrate and in the fact that steam is a better conductor of heat than air.
As for a substrate it sounds like you all ready have almost every thing you need. I wound go to a craft store and a buy mini bale or two of straw. A 50/50 mix of shredded h-poo and straw with a little gypsum makes a fine substrate, much more on this can be found in mushroom cultivation on this site.

hipster--thanks for the advice. i'd like to try your idea about the pasturization, but i don't think i've got any roasting bags. the trouble is, i'm kinda stuck out in the woods for a few days. do you think there is a way to use something more "on hand" in place of the roasting bags, or will i just have to wait to be able to get some? what about the pillow case in the large pot idea, is there a timetable i can use to replace the need for a thermometer?

I don't agree with the pillowcase idea. It leaches so many of the nutes when sitting in hot water for several hours. I use turkey bags, put my sub in it. Then I fill my PC with enough water to come 3/4 of the way up the bag. I put the lid on, turn the heat on high for about 30 mins, then turn it down to between warm and low and let it sit for about 4 hours. Works great, mostly. Keep pasteurizing temps under170 and above 140.

Use quart jars, keep all the moisture and you should have some!

yes, i do have plenty of quart jars! what is your recommendation for this idea? pack the sub in the quart jars, how do you cover them? cook for how long, etc? forgot about the quart jars for pasturizing sub, can you elaborate?

Yes you can and many a person has over the years. Just make some you use some sort of stand off in the bottom of the pot so the pillow case and substrate are not standing in water and cook for two hours covered, plus it will have to be right a way. With the roasting bags the bag it self seals out contaminates, some thing you won't have with a pillow case.

so i raise the pillow case off the water, cover the pot, and cook right below a boil for 2 hours, let cool, then make my trays?

Yes that's pretty much it. It's easy to dry the substrate out doing it this way, so when cooking it be sure to keep your eye on it and if you see that the pot stops steaming add more water to the pot by pouring down the pots wall and not the substrate filled pillow case You will want to let this cool in the pot. Then remove and fill your trays waring gloves or at the least well washed hands.

ok, so what about the cakes and 2 trays, do you think that i should be more patient with them as it's been 7-9 days, or just dunk them tonight? the bluing on a few of the cakes might have been from when i moved them. are there drawbacks to dunking that would make me think twice, like will they take alot longer to fruit?
