BRF jars - Isn't the bottom supposed to colonize last? Whats going on here? (PICS)
    #9092677 - 10/17/08 04:37 PM (16 years, 3 months ago)

Ok, I'm told the bottom is supposed to colonize last, and that is when you start the one-week wait before fruiting or whatever...

So... some of  my jars have the bottoms 100% colonized but the top 1/2 - 1 inch of the sides is not as fully colonized as the rest of the side. It is colonized, just not as thick white as the rest.

Although I didn't pack the substrate in the jars (I just gently spooned it in), I did gently tamp down the top so I could have a nice flat and even surface to put the dry verm layer on. I did it very gently however, so...

1) I am wondering if that very gentle compacting was enough to slow colonization in the upper 1/2 to 1 inch portion?, or if there is another more common solution...

2) And, should I wait for the top of the jar to be as thick white as the rest, or should I birth in a week regardless?

BTW, if you were wondering, the dry verm layer doesn't go nearly that far down; it stops about where that glass bead/ring thing is...

(This jar is the worst (regarding this specific issue) out of all of my 100%-bottom-colonized jars)

-Thanks

use the 250 ml jars instead of what look like 500ml jars and you should notice a quicker colonization time as well

It's normal for the substrate to shrink a bit, so the dry verm indeed does end up going down that far.  I'd start your one week consolidation phase now.

I've not found the bottom to colonize last.  Those who do probably made their brf too wet.

Actually those are 1/2 pint jars, just not widemouth. I had immense trouble finding widemouth anywhere, so I initially bought twelve cases of the regular mouth 1/2 pint, which coincidentally also have a slight taper.

However, after finally searching through literally dozens of stores, I have finally found some Kerr 1/2pint widemouths!!! (Albeit almost twice as expensive...) So my next batch(es) will be done in those.

1) Should using the 1/2pint widemouths fix the problem of the substrate level shrinking?

2) Also, is it possible that I put the substrate in the jar too loosely?
I mean, there were obvious valleys in the substrate from the fact that I just spooned it in there with no slamming the jar down or packing it in any way. Would tamping/banging it slightly next time prevent this little side effect?

-Thanks

Bottom colonizes first on almost all of my cakes.

If you can't find widemouth jars, use drinking glasses. As in the PF-tek for simple minds

I finally found widemouths, like 10 stores later, for twice the price! but I returned 10 cases of the reg mouths and got 6 cases of the wides, a decent compromise considering I really do like the shorter fat cakes as opposed to the tall and skinny ones. Good luck finding widemouths in any big chain stores anymore... Unless you want the 1/4 pint jelly jars :frown:
