Pressure cooker with crazy long warmup/cooldown times and the effect on PCing times?!?...

Ok, if I'm PCing some LCs, and the tek says to PC for 15 or 20 min at 15 psi...
My PC takes like 45 min to heat up, and like 30-40 min to cool down. I know everyone says just shut it off and walk away, but that would mean the jars would be above 10 psi for a good 45-60 min in my case. I don't have a stove in my apt, so I am using two hotplates, (the kind that look like the small burners on a stove that the pot sits directly on) and the PC sits on about 70% on each of them (they are pushed together as far as they can go).
So when the tek says "shut it off and walk away", does it account for abnormally long warmup/cooldown times, or do I have to adjust it accordingly?

I've made a few successful LC with Karo and what I did was heat the PC to boiling, then put the jars in, lock down and wait for pressure, about 5 minutes I believe, then start the timer for 15 minutes. When time is up, remove from heat and take the weight off so it depressurizes/cools down faster. The faster cool down will cause the LC will boil and get the underside of the lid coated which could cause a problem with contam depending on if you have a filtered gas exchange hole or not.

Very bad plan. It can and will cause boilover of LC and agar, wet filters, and loss of moisture from grains and pf cakes.
Shut off the stove and walk away. There is no 'maximum' sterilization time. The recommended times are sufficient to kill the bacteria. The extra cool down times are icing on the cake and don't hurt. RR

Won't being at high temps for longer periods while waiting for the PC to cool by itself expose the LCs to possible carmelization? I have heard so many different theories on "what temp LCs carmelize at" that I am even more confused about it than when I started.
Any tips from the experts?

Karo is the only LC that has not caramelize with me. I have tried malt/dextrose per Agar's recipe and a honey LC. I am in the same boat, standard electric hot plates. No matter what I do they all caramelize except for Karo. It may not be the best LC but it works. As for the cool down it takes all of us a long time to depressurize. I wouldn't just take the weight off like RR said, boilover. Try Karo, you should be good. Also with WBS you should be good as well. 60-90 Min with WBS and 15 min for Karo LC is what I have done. 25 Min just seems too long, I had less channelization at 15 than 20/25 min.

I have the valve, not the weight; does the wobble equate to the sporadic venting of steam through the valve, or the steady venting?
