over 180f is too much. Ideal is 150-180f.

I wouldnt go past 180F. Thats the hottest ive heard people past. at. I usually heat up between 175F-150F for two hours. I use a huge ass pot. Its usually completely full too. Takes me half an hour just to warm the water to 150F. Remeber the outsides of the pot get warmer than the middle. I stick my meat thermo, in the actual substrate to check the internal temps of it. you can get a 20 degree difference between the side of the pot and the center of the substrate.

Yea, I followed RR's instructions but my jars just kept going and going until I finally said fuck it and threw a few ice cubes into the water to keep it from getting any hotter at 75C.

i have reached 190 and still used the substrtate no problems. it was an accident i am not recommending it.
