My First Grow Log: 10/10/08 Birthed 3 cakes, couple Questions....

This is my first grow, heres a short list of what Im using and the progress Ive made up until this point...
Im using
-PF tek (RR videos) w/ 5 BRF cakes -Ecuador spores -Storage container incubator/fruting chamber
-The jars were inoculated on Sept. 7th, first signs of growth on Sept. 14th. -First fully colonized jars(2) on Oct. 5th(I suspect it took so long because temp. was unsteady, 74-78 most of the time).
So as of today, 10/10/08, I have 3 fully colonized jars, 2 at 5 days, the other at 2 days, and 2 jars at about 98%. There is visible moisture in the jars and a few show signs of mycelium piss(?), Im thinking that the last two jars are having trouble fully colonizing because of lack of air but Im not sure.
The only concern I have is with the moisture and Im wondering if I should go ahead and birth the 3 colonized jars with a dunk and roll, or if I should wait a few more days since theyve been fully colonized for 5 days now...Also, should I keep the 2 98% cakes in the jars? because they seem to be taking their time colonizing...

Wait a week and its not mycelium piss its metabolites. Also if you could use the macro feature of your camera (flower button) to show the finer details.
Take the tinfoil off the top to allow for gas exchange, I imagine once you do that that last bit of BRF will colonize. Your dry verm layer is your protection. Your temps were dead on, I suspect it is your gas exchange.

Today I birthed 3 of my cakes. I think they're okay, they had that nice fresh mushroom scent..
the light yellow spots that I assumed were metabolites(sp?) seem to be part of the mycelium and not liquid as I thought they would be, is this okay? Also there were small pieces of what seemed like clear gelatin, what is this?
Any info would be highly appreciated, I've never heard of this gelatin stuff or light yellow spots of mycelium...
