Oysters are very easy to grow -- you've been misiformed if you think edibles are harder to grow than cubensis!

If you're just starting out, it's fairly easy to acquire some grain oyster spawn and then innoculate straw/sawdust/woodpellets/newspaper/coffee grounds. Once you're comfy with this, working on and dividing your own cultures is a good next step.

hey man, paul stamets book Growing Gourmet and Medicinal Mushrooms (ggmm) is an excellent resource for the purposes of undertaking the legal cultivation of fungus. agar culture is not necessary, cuz you can legally buy spawn from reliable producers with which to innoculate whatever substrate you choose. and oysters (along with many other lignicolous species) happen to be one of the easiest for mycophagists to produce. many are tropical in origin, and thus have evolved a great tool for survival in moist, hot, fungus/bacteria rich environs. the fantastic tool is speed. (which is probably why cubies are so "easy" to grow).
seriously. i have grown oysters on lots of dumb shit, including random yard waste with grass and dirt and stuff included. also, sterilization is by no means necessary, pasteurization is adequate in most cases. anyway, buy the big 35 dollar book. you'll thank yourself. the newest edition has some welcome adjustments that bring the book closer to today, although mrstamets has always seemed to pioneer.....peace and good luck.
