Gypsum from plaster

I notice loads of people here have said that plaster is not suitable to use as gypsum yet drywall is. From my knowlege drywall is simply PRESET plaster. Therefore in theory adding water to plaster of paris and letting it set should give you gypsum (you can then break it into a powder), since plaster of paris is simply dehydrated gypsum powder and adding will rehydrate it. Im guessing the problems people encounter is when they add the plaster directly to their jars without REHYDRATING it first. Anyone tryed using preset plaster of paris with success?

The important thing is to be sure your gypsum source doesn't contain magnesium.  Some items are labeled as gypsum but are not just calcium sulfate (the gypsum we want) they may contain dolomite (calcium magnesiumsulfate).  I bought such a bag from a garden center being told it was gypsum.  Magnesium is toxic to fungi so it's useless to us.

If someone here knows hot to tell if magnesium is present in the gypsum that would be helpful to determining what can and can't be used.
