Nay. There's a possibility, you're not giving the cakes enough fresh air. It's probably the single biggest pinning trigger. It looks like one of 2 things is happening here
1- it's some kind of contaminant i've never seen before. 2- the cake isn't pinning because it doesn't have the necessary constant environment to do so.
I could be totally off, but my gut tells me, you need to give fresh air supply priority over the humidity level. If your humidity starts to get too low, remember to mist enough after fanning, and maybe add more damp perlite. How often do you fan? What kind of fruiting chamber setup is it?

After reviewing the pictures again, i'd like to stress not to consume that cake till you're sure its not contaminated. That could definitely be some sort of a mold. Many parts of the cake are bluing, probably from dehydration, but look, no blue whatsoever on the puffy parts, not even where you put the thumb print at. That should have blued. I suggest pinching or squishing some of the puffy, just to be sure it blues. Still fan it a lot, see if it starts to pin. I'd probably go so far as to cut off the puffy parts to take a look underneath them.

The puffs defintiely bruise. They smell like fresh mushrooms. The texture is like that of mushroom tissue. I'm pretty sure they have plenty of fresh air. I do several FAE per day, along with the hundred or so holes drilled.

Ok, just to bring this back and shed some light on the issue. There seems to be little to no information as far as the 'blob' growth.
I harvested the blobs and dried them. They have a different wet/dry weight ratio than an actual mushroom. They lost about half there weight upon drying so I was very unclear on dosage. Total dry weight was about 3.5 grams, boiled into tea with 1.5 grams of actual fruit bodies, split in half with my girlfriend and drank. The experience was far more intense than I thought it would be.
As long as you can be sure they are not a contam, these blobs are good for the pickin'
