Use lime for casings and gypsum for substrates.

Hydrated lime works faster, over a shorter period of time than the slower acting, longer lasting gypsum, which also helps with airiness. If you don't use a casing, you don't need hydrated lime.
They are not the same.

Gypsum can be found at any nursery.
If you cant find it, grind up some new drywall, (get scraps from a construction site), and take out the paper. BAM! Gypsum.

The guy at your hydro store was mistaken. Gypsum and lime are not the same, or even close. Don't substitute one for the other. If you can't find gypsum, then just skip it. Your coir will still work. You'll get more bang with gypsum, but going without isn't a deal killer. RR

Get some gypsum for free via drywall. It is pretty easy.
See my post about it. http://www.shroomery.org/forums/showflat.php/Number/8797620

The guy at the Hydroponic store is obviously "high" or he's a moron. Either way, you don't have to search for Gypsum there. I like to buy pelletized Gypsum and put it in my blender until it is a powder. Lowe's and Home Depot carry it.

My local hydroponics shop doesn't carry gypsum either.
Oh well... lots of ways to get it. Some ways are more fun/work than others.
