is this a good idea?
    #896031 - 09/20/02 07:08 PM (21 years, 9 months ago)

Consider the following hypothetical scenario:

6 pint-size jars of rye are sterilized and innoculated with 1.5-2cc each of spore water. They are shaken well. After 6 days of nothing happening, they are shaken up a little. The rye is all pretty loose, not to wet, as it was simmered 40min before pressure cooking. There are some drier grains and a few exploded ones. After 10 days, ONE jar shows signs of steady colonization, ONE shows signs of green mold, and the other 4 show nothing.

NOW, the question. Assuming the person possesses a decent glove box to work in, would it be wise to take a few colonized grains from the colonizing jar and add them to the 4 uncolonized jars so as to speed them along? Or should the person just wait longer and see if the other 4 make it on their own? Again, assuming this can be done in a nice glove box that is fully sterilized with Lysol, would the results lean more towards success or failure? Risks?

Thanks,
Robin
