Fermented smell after dunk

I picked my first flush of mushrooms yesterday, and put them in jars full of water to soak for 18 hours.  Upon opening the jars, there is a distinct "fermented" smell.  The cakes look normal apart from some bruising.  They didn't smell fermented before the dunk - they smelled like mushrooms.  If you don't know what I mean by fermented, it's sorta sour and sort of like wine, or fruit.

It's only been a few minutes, but after removing them from the jars and putting them back in the FC, they still smell fermented.

What is this?  It is doing it to 3/3 cakes.

Rinse them off under the faucet before and after the dunk and they'll be fine.  It's normal for a bit of bacteria to grow during the dunk, but bacteria is not really a contaminant after full colonization.  In fact, it may actually help fruiting somewhat.

Thanks RR.  I washed them off and they smell a bit less fermented and a bit more mushroomy.  Though they're still sorta smell like wine, I guess this will go away on its own.

Dear RR! I know it's a five year old thread but I have the same problem as Crhissi. I read a lot about it in the forum and it has been seen several times suggested to others to drop the cookies.Crhissi bars but said it's not a big problem! Now I'm a little unsure what to do! Any advice greatly appreciated!  Thank you in advance for your answers!
