Pasteurization Temps

AFOAF recently decided to switch to straw with little success. He then began to truly monitor the temps of his straw. He is basically following Shroomgod's straw tek as follows.
Heat up water bath to ~175 degrees. Add straw in pillow case and weigh down. The water temps have been kept at ~150-175 degrees. Today when he measured temps, he also did so with a thermometer inserted into the middle of the pillowcase. What he noticed: Water is at ~175 degrees and the middle of the pillow case is barely registering 140 degrees. From my understanding, we want to avoid temps over 180, yet he is struggling to get the pillowcase up to 150, while the water is 25-30 degrees warmer. Other than purchasing a bigger pot, is this method OK? Won't the "outside" always be warmer than the center during cooking?

My friend already cooks it for two hours. Should he bump it up to more?

depends on how much sub is being pasteurized. The bigger the sub, the further away the center is from the water being heated. If anything, you should get a smaller pot, not a bigger one.

as far as i remember you need to middle of your sub to reach pasturisation temps.

140F to 160F at the center of the straw is what you want to maintain for one hour. RR

Will longer than one hour hurt? I have read your tek as well and do not do the presoak. Would one hour still be sufficient?

Will 2.5 hours hurt? The middle of my friend's straw never went above 160 degrees.

it shouldnt hurt because temps over pasturization will not be reached. you will kill off unwanted bacteria ect. while keeping good microbes.
