how long does past. poo last for, and coir q

i pasteurized too much straw/poo mixture, how long will it last before i have to pasteurize it again?

when making a casing, could i speed up colonization by adding coir between layers? not much just a coupld sprinkles. like strate/coir/pf cake/strate/coir/pf cake... etc etc.
