Gotta move my stuff, so I put all my colonizing rye jars into the fridge. I believe thats how you stop mycellium growth and then later I can restart it by taking them out, right?

Or does the cold only slow it tremendously? And will the cold have any effect on the fruiting of them?

The latter is correct, it only slows growth. Fruiting will not really be effected, it will just delay it somewhat. Don't leave them in the fridge too long though.

I've left mine for a couple of weeks with no noticable consequence, but the longer you leave it, the weaker the mycelium will become, which in turn gives contaminants a better chance of taking hold.

Just as a note, I'm talking about fully colonised jars here. Jars still colonising should do better as they're still growing.

I would disagree about putting colonizing jars in the refrigerator.  You don't want any uncolonized grains or brf stored.  Molds will easily grow in the fridge as we've all seen on our cheese if we leave it too long.  If you need to store jars for future use, always wait until full colonization.
