use only brown rice flour. You could also try Dark rye flour as a substitute if theres no brf around your area. I strongly suggest going to any upper class grocery store that caters to rich or eastside type's. They'll have it They always stalk healthy stuff like Brown rice flour. Also check any organic food store or health food store. they should also carry it.

I have used regular flour from wheat or whatever with limited success. Basically, it CAN work as long as it's organic. Good luck

Why do you feel that it has to be organic? I've had great success with non-organic flours. I think the most important thing is that the flour was manufactured for human consumption.

Well, I stand corrected I have never gone outside of the organics, I will try some different types now that I know this. The reson I said this was because I assumed that the non-orgs had fungicides and insecticides sprayed on them ( but thinking about it more, i realize the organics probably had the same thing, only organic...) So any flour works?

If it's safe for humans to eat, it should be safe for the mushrooms too.

Isn't it advised to use organic because they will not have fungicides (sp.?). And the argument that just because something is safe for humans makes it safe for mushrooms is a huge stretch. In that case I'm gonna start casing my cakes with ground beef, Talk about meaty shrooms.

Thanks for taking my reply out of context. If you could read, you would see that I was replying to a statement concerning flour...

Mikey, you're right, my statement was a little far off, for that I'm sorry. But if any grain is ok to use, then why is it usually advised to use organic flour? Just wondering.

I believe this was started based on people believing that the chemicals used in non-organic farming could harm the mushrooms. In practice, I believe that if the flour is safe for human consumption, it most likely will not harm the mushrooms. I've had great luck without using organic flours.
Peace
