pressure cooking precision!

I finally figured out what ive been doing wrong all along with my rye. It;s always comming out of the PC too dry, alot drier then before i put in. I always keep it so the weight is jiggling and steam is escaping alot. I guess this is drying out my jars... Anyone else ever run into this prob?

Yes, I've posted about it many times.  Any time the weight jiggles, moisture is escaping your jars as well as the PC.  With agar, it causes boilover, ruining the batch.  That's why we recommend you reduce your stove burner as soon as pressure is reached, to the minimum setting that will maintain pressure without the weight rattling.

Always happy when you reply RR... I try to follow your TEK's to the T! but it's little things like these that I miss that totally ruin everything. Trial and error! Im slowly but surely getting there.
