and your a fan of beer

then hows the idea of banabaneer sound?

im gonna start brewing beer again soon and might try making a banana beer, and ill call it "banabaneer"

do you think this would be good?

i got access to bananas at 19cents a pound or something ridiculous and was gonna make a concentrate after they get all brown and nice
maybe toast my grains before i steep my wort, maybe even throw in some heavy malt (not too much), definitely doesnt sound like a hopsy type of beer though
toasted grains and bananas ftw

Personally, I don't think banana beer is a good idea, but I can imagine someone else maybe liking it so go for it. :shrug: I definitly have enjoyed a variety of berry and apple flavoured beers, so i can imagine banana maybe working out.

Actually, in my favourite brew book, Sacred and Herbal Healing Beers by Stephen Harrod Buhner, there's a traditional recipe for a banana beer the Wachagga of Africa make. I'll type it out for you:

2 quarts very ripe bananas
yeast
5 quarts water
3 quarts malted millet or barley (if millet is unavailable or too much work to malt yourself)

Mash bananas and cook without water. When cool add the yeast and let ferment 4 days in a wooden pot. On the 5th day add the water. On 6th day grind the millet or barley malt and pour on enough boiling water to make a dough. Strain banana water and mix very gradually and throughly with the malted millet/barley dough. Let it stand, covered, 24 hours. The drink. Like all traditional fermented beverages this banana beer is not strained. It is considered food/drink and the whole is consumed.

Of course you can adapt the recipe any way you like, but this helps for ideas anyways.

i would assume it not to taste too much like bananas, but bananas are very high in sugar, one of the highest sugar fruits used in brewing, its 17% sugar by weight.
a banana puree would pack one hell of a punch, and in combination with toast malted grains actually reminds me of a granola beer or something.

ill definitely give this a shot

Personally, I'd probably just go with my standard technique and make a normal wort with whatever malted grain or malt extract, although I might take the advice of mashing and boiling the bananas separately, with a bit of added water than straining them into the wort, adding yeast and letting 'er go. Maybe something to bitter it a bit? Hmm... Seems like it would taste sweet without some bittering herb.

hell why not, i have had chocolate beer<wasnt my fave, but it was beer, and by god i was going to finish it.  Good luck with your experiment.

In many African countries, banana beer is a staple drink.

I'd just let it sit on mashed bananas in the secondary fermenter. But what do I know.

Fermenting just the bananas really sounds nasty though.

One of the next batches I do (after the coconut-plum ale and the pumpkin ale) is going to be a chocolate banana stout, but I'm planning on using banana flavoring instead of actual bananas in the recipe.
Actually, I'm thinking about making a 5-gal batch of chocolate stout, then splitting it into two 3-gal secondary fermenters, and adding cherry to one and banana to the other. It's going to be a tasty winter.
