Question about pressure cooking grain

I currently have 6 rye jars pc'ing, and something came up that I will be gone a length of the day by the time they cool. I don't think letting them sit for 12 hours after they've cooled will be a problem, but thought I'd see if anyone on here had a differing point of view, or perhaps any suggestions on how to cut down on something shitty happening - as you guys are fill of shroomy wisdom :grin:

I've let mine sit a week before, but don't recommend more than three days. I like a headstart on contams.

if your jars are sterilized right, then you have no worries AT ALL about contams.. the whole point of pressure cooking is to kill that stuff, not just fight it off..

I usually PC my jars for 1 hour @ 15 psi, and let them cool in the PC overnight.. sometimes I dont even bother to shake them when hot.. I will just PC, and when done, I turn off the burner and go to sleep.. When I awaken, noc noc time.. I have let them sit for a few days, and they started to get stinky, but I think that was my fault.. my old PC didnt have a gauge, so it may have been the issue.. but you will have no problems.. I would say just try to do it within 24 hours, but its not life threatening if you dont..

I let mine set overnight to cool and leave them in the PC until I use them later that day and have had no problems. Leaving them in the PC will actually help keep out contams.
