I just went rafting down the Deschutes last weekend!  It was a blast (my  first time rafting), I definitely recommend it.  Oh, and be sure to jump out and ride the waves at Butt Rapids (I don't think that's the actual name of the rapids, but that's what everyone calls it).

I can't really recommend any guiding companies, since I went with an experienced rafter in the group (cut down majorly on costs, he had a raft so we didn't have to rent).

One thing I will say: A little drinking while rafting is fine, but don't get wasted.  I can't count the number of rafts that nearly missed the take-out because everyone onboard was hammered.  And there were a couple drunk folks who looked like they were in serious danger of drowning if people hadn't intervened to help them out of the water.

I've gone twice so far, and it's a shit load of fun.  Both times I have launched from Maupin, OR (2 hours from PDX), but I know you can launch further south, too.  Both times I used Sage River Canyon, which is an awesome company. Their website is:
http://www.sagecanyonriverco.com/
They make a kick ass chicken and steak lunch when everybody else is eating hot dogs or cold turkey sammiches.  All the guides have 7+ years river experience, and know their shit.  That company let's you bring booze on the boat, but like Entro said, moderation is key.  I fell in when we got wedged on a rock in the middle of some rapids and I'm glad I wasn't drunk. They will also let you cliff dive. It's pretty reasonable, too. Next time I want to do a 3 day trip.

You can't beat a private raft with an expert, but I can't help you there.  Both times I went it was worth every penny.

It's about an hour and a half south of PDX, about 100 miles.
