This spring my wife and I started a oyster mushroom operation. We have grown into doing 50lbs+ of oysters a week plus shiitakes and a few other sawdust bag mushrooms. We were able to do it on the cheap in an outside shade house, getting jars at garage sales and doing all the labor ourselves.

Most of our money this summer has come from farmer's markets. Unfortunately the markets are ending in the coming months and we are just boosting and boosting our production capacity. I need to start getting out to more restaurants, we have one regular restaurant buyer and the chef says they are the freshest, best mushrooms he has ever seen.

We are in a tricky spot because we need to find some sort of indoor setup for this winter and don't have the cash up front. Basically in the next two months while it is still warm we have to try to sell to as many restaurants as possible so we can retain them as customers through the winter. If we can develop a steady cash flow from the chefs our families will step in and help us with a loan, since we both have bad credit.

Anyone have any advice on marketing the mushrooms or working out a winter plan?

reach out to surrounding cities and towns... you can overnight your product to the restaurant. or deliver yourself..

Retail to smart markets or better yet find markets that sell the mushrooms you're growing and then find their packager and sell to him. Packaging companies are usually open to striking new deals with a good supplier of a product they deal with. The tricky bit is the demand

ha op was near where i grew up. that was a good bump rosen rot.

to do anything in stores you have to have insurance i think

Over here you need a trader's license and a sanitary license before you can market. After obtaining those you need to follow marketing standards. Each country has it's own but if you wanna look at a general one that usually applies to all over the world check out
