What should I brew next?
    #8787861 - 08/17/08 08:56 PM (10 years, 2 months ago)

So, I just took my blackberry wine out of the carboy, ended up with three bottles plus some that a friend and I drank right away. But, my quandry now is what shall I do next? So far, suggestions have included:
Hard cider (nice fall drink, looks fairly easy and possibly fast)
Mead
Muscadine Wine (we're not SURE I can get the muscadines for this, and I have a decent source for the stuff in town)
That's actually all of the suggestions, though I'm open to others. Any thoughts from you fine folks?

mead!

blend a buncha fresh fruit in a blender, with water
strain off the chunks, and freeze the liquid, save the concentrate on the bottom of the frozen juice and throw out the icey stuff on top

buy some agave nectar and honey, and add about 1/5 the amount of honey worth of agave nectar, add the concentrate and brew

rack onto sliced mango let sit two weeks and strain off for the remaining while and let sit as long as preferred

mmm, that apfelwein looks delicious! I'd like to experiment with using brown sugar or honey instead of the dextrose...

Go for it but--bear in mind the clean fermenting dextrose is part of what gives apfelwein such a crisp flavor.  Brown sugar and honey are fun but will produce slightly off-flavors in comparison.

Apfelwein is cheap to make, and will give you a super refined product a couple months down the road.

Nobody that tastes mine believes that it's just apple juice, yeast, and dextrose.

Follow the recipe = win

Wild grapes are starting to come in here,(Kentucky). Why not a wild grape wine, if you live where they grow?

Elderberry wine.

You can pick the berries for free at this time of year and it is comparable to the best red wines. Or make a mead version. In fact, I am brewing a small batch of elderberry mead as we speak and the last batch I made was fantastic.

Pure ambrosia.
