Bulk substrate questions

I have a large dish tub full of coir/worm tea/gypsum and B+. I mixed the pasturized sub 3 weeks ago with rye spawn. I then covered the surface with aluminum foil. When I checked on it today, the parts that were covered with foil have not colonized the surface while the edges around the foil had colonized and knotted for fruiting. There were a few rye grains on the surface that had spawn on them, but it had not jumped to the coir. Very strange, so I cased it with pasturized 50/50+, gave it a bit of watering because the middle looked dry (which may have been the cause of the bare spot), and placed it into a clear garbage bag with slits for a small amount of air exchange. It now resides in the FC rather than above the fridge. I hope that casing it and adding a bit of moisture will get the middle to colonize. What do you think? I forgot to get a photo before casing.  :foreheadslap:

It should have all colonized across the top.  You did cover the tray and not the substrate correct?  You're supposed to cover the tray and fold the foil down tightly around the edges.  There should be at least 1/2" of air space between the substrate and the foil.
