substitute for gypsum?

Does anyone know of a good substitute for gypsum? Can powdered oyster shell work? Do most people use it in rye teks?

I have read that plaster of paris and drywall sheets contain gypsum. I'm sure there are other sources, try a web search on Google.

I don't use gypsum when making my Rye jars.

Just out of curiosity, do most of your friends pre-cook the rye or cook it during pressure cooking? I have experienced burning in the jar when I pre-cook.

I always simmer my birdseed to get the proper moisture level before I PC.

I never soak my rye, pre-cook it, or use gypsum. I now that most ace or true value hardware stores carry it. Oh and drywall is gypsum not sure if all dry wall is but most of it.

I use plaster of paris. Gypsum is calcium sulfate, plaster of paris is dehydrated calcium sulfate.

I always simmer grains for 30 mins, drain, rinse under the tap and leave to drain for 20-30 minutes before putting into the jars. Works fine
