Found a nice little haul of oysters today, not great pics since i was soooo tired from getting up at 5:30 to hunt but here they are...






Im going to cook them up with sum scallops tonight, never tried it but i think they should compliment each other.

I posted these same ones the other day but they had not matured yet, its crazy how fast shrooms grow.

Can you show the two pictures side by side so we can see how fast they developed?  I looked at the other thread but couldn't make out which ones they were.

are most things that look like oysters and are off whit edible ?is there allot of look alike mushrooms for oysters? I think i might have found some oysters yesterday but i currently don't have a camera.

With those Oysters I saw I am planning on watching them until they are fully mature before I pick them.  It's about freakin' time!  I haven't had one decent crop this year.  I love those things.  I like them more than anyone other edible.

Seafood platter was awesome, bourbon glazed salmon with scallops fresh broccoli and the mushies it was soooo good even a little cous cous

Yep.  Morels are great, but I reheheheally like Perch.  We batter them and fry them.  Oysters, especially if they are growing on Elm or Quaking Aspen, taste like fresh Perch.  Nummo.

That meal sounds great, we cooked bourbon brown sugar salmon Monday night, mmmmn fresh broccoli, I always make brussel sprouts w/ my salmon, sliced, sauteed in olive oil, butter, thyme and topped w/ chopped pistachio nuts, and fresh chopped parsley. Cos Cos is cool, have you heard of a similar grain quinoa? takes less time than rice to prepare and possibly more healthful, has a really nutty odor when cooking and flavor.

Sprout70 quinoa is very good i love it my wife turned me onto it, i cooked the rest of those oysters tonight for dinner. Made them with sum sweet corn(white corn)and home grown onions it was delicious.

you have  such luck with oyster weilliii , good !
i still need to find the great oyster patch  we have more tropical varieties here maybe pulmonarius, is rare to find ostreatus, as you do there in the woods , i mostly found my ostreatus in the city , and in the natural woods , p. levis, p. dryinus . and few other ,but rare to finds ostreatus,.

two ways I prepare oysters that I like alot:

saute in butter with rosemary and tarragon, add to eggs or over chicken or in rice... anywhere you want to add some flavor and texture is good

or, saute in butter, once brown add more butter, soy sauce and lemon juice... just a bit of each of the latter, because they are strong flavors. Add a little bit of water to deglaze everything. My wife likes these by themselves as a side, but I think you could really do boring chicken a favor by adding these to some nice pan seared chicken. They probably would compliment fish, as well. I'm trying to figure out how to thicken the sauce... probably corn starch would work well.

Just a note... white wine and garlic don't do good things to oysters.
