Casing too dry?
    #870566 - 09/08/02 10:37 PM (15 years, 3 months ago)

A friend was wondering if his casing, which is pitcher-tek-humidified at an average 96% RH, needs misting, as it has not pinned after a week (and do casings generally take longer than cakes to pin?) of these conditions. The 50/50 + casing has pulled away from the sides of his trays, there are little water droplets almost covering it and temps are in the lower 70's. Thanks in advance for any advice

yes. you ned to mist the casing layer, also the casing is pulling away from the sides because it is sucking up moisture just fill in the sides with casing material and mist daily. if it doesn't pin after another week try cold shocking. hope this helps. good luck!
