simple lil wbs question

Sometimes after prepping some seed and hydrating it just right I am too lazy to pc it right away so I will toss it in a jar with a SEALED lid (no polyfil hole or anything) and let it chill for a day or two before I get around to pcing it.  Is this cool or will the moisture cause the wbs to ferment, or germinate, or whatever the hell it was called that you don't want it to do?

I've used fermented wbs before with no problems, so I don't think it matters whether that happens or not. They may germinate if they are still viable, which I doubt they are if you simmered them. I would assume that they would be fine, but I would put them in a cool place such as your fridge to lower the chance of them getting moldy.

I have a few jars that I PCed but didn't inoculate yet so I put them in the fridge just to be safe.
