Cold dunking

I have 2 questions about dunking.
I understand that cold dunking is beneficial in that it accelerates the mycelium once it starts fruiting. Q#1 What is the optimum temperature to do this? I really don't have much room in the refrigerator so I cant put the tub of water with the cakes in there. Q#2 Could I successfully cold dunk by weighing my B+ cakes down, filling the tub 3/4 full of water and carefully adding ice? This would bring the water temp down and I could monitor it with a thermometer and adjust it as needed.
Just wondering.

There is no need to cold dunk. It takes the myc longer to recuperate than room temp. RogerRabbit has started to advise against it.

The benefit of dunking in a fridge is that it keeps bacteria from multiplying in the water and it slows down the mycellium's metabolism so it doesn't mind the lack of air too much. Like everyone said above, cold temps do not encourage fruiting and actually slow growth a little. Dunking once pins have appeared can cause aborts.
You can dunk in a zip-lock bag full of water in the fridge - you don't need anything big. You can also do it at room temperature. It's not that sensitive a procedure.

I have done it a few times...I won't lie. It slows things down, but as said above is a great way to prevent contaminates. Thing is if you are very sterile in your techniques then there is no reason to use the fridge as it slows things down.

If it's extremely hot in your house, you can change the dunk water a couple of times during the process. I used to recommend dunking in the refrigerator for the reasons stated above, but have found that if you give the cakes a proper rinsing before and after the dunk, the refrigerator is unnecessary. Cold tap water works fine. RR
