Coolest professor ever

Some of you guys might remember my freak out post about when I missed a physics test a few weeks back due to some health problems.
I talked to the professor about it and explained my health issues to him and he was completely understanding, if not a bit sympathetic. This shocked me. Most of the time I get the whole "Oh, well you don't look sick" situation when I tell profs what is going on. Ignorant professors who are unwilling to work with my health issues is actually a big part of the reason I still haven't graduated yet. One professor actually FAILED me because I had a flare up and missed a week of class. That old motherfucker still hasn't heard that end of that one.
Anyways, the physics prof is the most understanding professor I have ever encountered. He told me that I can retake the tests that I missed as a result of my flare up, which happened to be 3 tests and the final. Mind you, he's letting me do the retakes for the first half of the class while allowing me to continue on to the second half.
I was supposed to retake the 3rd test this Wednesday, but I managed to overexert myself at the gym and caused a lot of problems with health issues. I explained this to him on Wednesday and he said "Oh well thats too bad. I want you to feel your best when you take this test so we can just do it tomorrow." I wake up today... still feeling weak and in pain. I was really hesitant to call and ask for another day so I just called him to see when he wanted me to make the test up. He ASKED ME how I was feeling. So I told him and he says "Oh, well lets just do it next Tuesday." I was dumbfounded. If only all of my professors were so cool when I had health issues... I would have graduated a year ago.
I've only had maybe 2 other professors who were even close to being this understanding. Every time I run into one I just want to give them a card or a gift or something when the semester ends. I don't want them to feel taken for granted. I wish I could let them know how much I appreciate them for being willing to work with me. It's a rare thing to find these days.
You think some kind of "thank you" would be nice? What would you do?

Wow, what a amazing dude. I don't know. I would probably give him a plant, like some living bamboo, or something. And write a letter expressing my sincere gratitude.

Yeah, a card is one of the simplest yet nicest things you can give someone. Proof that it's the thought that counts.

Yeah, I think I'll probably do a card. Finding a card for a physicist should be an interesting adventure

It doesn't even have to be a card. I know I like cards, but I enjoy letters even more. It's your call though, but I like letters. They are a lot more personal, so only you can decide which one to write.
The plant idea is a good one. I really like that.
