i used to never have broken LC jars, but lately im losing anywhere from 2-5 jars for each 10 i make. they are cracking in the PC, during the heating up, i can hear this happening, ive become familiar with the sound unfortunatly.
are these jars just being made more cheaply, or have forgotten something?
i put about an inch of cold water and a spacer tray/rack on the bottom. then i load the jars in with loose bands and foil on top. i even started the heat at 5 this last time, before i turned it to 'high' and put the weight on it (after venting). and i lost 4 out of 7 jars, worse than ever before. i dont get it. and its starting to get wasteful and expensive. help please.

Are the contents of the jars cold when you start to PC? If it's not thermal shock, then maybe they are knocking into one another? I've used PC for canning mega amounts, and never lost a jar. Although now that I've typed this...
Maybe you just got a bad batch of jars. Check carefully each jar for minuscule flaws before PCing. I'm sorry you're having such a crappy time of it.

OH, make sure that you're not tightening the jar lids all the way. You want them to be just snug...

I and a lot of my friends let the water boil before closing the pressure cookers lid.

alot of people put spacers like metal disks or rags in the bottom of the pot to reduce the intense heat transfer from the burner, that mostlikely has cracked your glass.

It matters little how much water is in the PC as long as it doesn't run dry. If the jars are on a shelf and you're starting the run with everything at room temperature, it sounds like a load of crappy jars. I've probably had five jars in the last twenty years crack while in the PC, so the problem is rare indeed.
Make sure you're not doing anything to cool the PC down after the cooking cycle other than simply shutting off the stove. If you pop the weight to let out steam, that's the problem. They need to heat slowly, and then cool slowly. RR

the solution in the jars is room temp. when loaded.
and i think the amount of water in the PC is not important like RR said, especially in an AA.
like i said i can hear the jars breaking before i have reached 15psi.
i bought 3 cases of 12 Ball widemouth quart jars, from the same place at the same time. now that ive broken so many i had to go buy more, from the same place, and they had newer packaging, a different batch altogether. im firing these up this afternoon, ill let you know how it goes. im going to raise the jars an inch off the bottom of the cooker. the rack that came with it is only 1/2inch, but that was never an issue before.

I'd return that stuff, BALL i'm sure has some sort of quality control situation... other than that, I can't think of any problems. Though I have to add that my pressure cooker manual states specifically that the water has to be brought to a complete boil before being added to the pressure cooker... Though I can't see this being a problem now if it wasn't before... I would say a big bad batch of jars went out or something... Keep us updated...

try heating your jars fairly slowly by not covering the lid right away
I broke some jars by closing the lid right away which builds up to 15psi or 250+f in a matter of minutes.
considering your going to cool overnight (in most cases) an extra 20-30mins for heating up won't delay your jars at all.
i bet thats the problem as i havent broken any jars since.

i ran 17 Qt jars without a single break just now. i think it was either a bad batch of jars, or heating up too quickly, but most likely chinese mycosubversion tactics for a preemptive chinamerica.

and as long as i have your attention, what about caramelization?
i use this recipe per Liter of H2O: 1 Tablespoon dextrose 1/4 teaspoon Light malt extract
sometimes i can get them to come out mostly clear after PCing, thats why i try to heat it up fast, and only hit 15psi for about 12 minutes, then i remove the jars when the PC is cooled down a bit, but not more than an hour. i don know, it seems random sometimes. i prefer the lighter solution though. any thoughts?

a table spoon is 15 grams
a teaspoon is 5? so your using 16 grams to 1000 ml
thats 1.6% percent
that should work with lighter lc recipes (1-2%) I find that more malt is better than more dextrose.
I actually haven't done any 3-4% lc's in a long ass time I find that they're just more cloudy, and colonize slightly faster. Slightly as in nearly unoticably.
Should be fine!
