cheap chinese agar

hello, I have found some agar (I think) at a chinese food store.. the ingredients are listed as "carrageenan, vegetable gum". Does this sound suitable for culture work?

Was it 'Telephone Brand'? If so, I have used that before and it worked, I got it from a chinese food market for $2 for 25g. Use 4/5 (measured) tablespoon (or 5g) per 250mL water. Even if it isn't 'Telephone Brand', if it says 'Agar agar' or something about agar on the packet it should be ok.

I have used raw agar with great results. I get the agar-agar strips, which I think are just a raw form of sea weed.

Definately! I use the thai and chinese brands - top quality agar! and around $1 for shiteloads!

This is a geling agent, but no agar. Carrageenan is an extract from a different seaweed than agar, but I can imagine it will work alike.

Thats the very same as the one i use - mixed with malt extract or milo sports-drink powder (high in malt) If anyone wants some of this, pm me and ill get it out to you for the cost of postage

i know what we would use agar for but what do the chinese do with it?

i would assume they use it for putting in various foods, like we do. it's a gelling agent for food. anything you want to make stickier and hold together. i wouldn't be supprised if they put it on everything. you could probably use it as hair gel if you were so inclined. i do not guarentee any results.

They make delicious gelatin desserts out of it. You add flavorings and sweetener and it forms a very firm, translucent gelatin-like material, which is typically cubed. It isn't very similar to jello, which is much less dense and usually almost clear. For those who are lack a chinese grandmother to teach them recipes, there are boxes of instant mix that only require the addition of hot liquid. These tend to come in flavors like mango or coconut, but I saw a very interesting coffee based one last time I was at an asian grocery.
They did not have any plain agar agar in stock that day, and I briefly pondered whether a culture would mind growing on a caffeinated substrate.

chinese use agar in lots of sauces. the thing about agar is it will solidify at room temp gelatine will not, it must be cold
