Don't overwater, but Dunk? Confused about this

I just dunked my first casing after my first flush was harvested. I did it because Ive read so much here about the benefits of dunking.
But Im a bit confused. I read a book on growing and it never even mentioned dunking. It mentions often though, to be careful not to overmist. Ive also read on this forum that overmisting is bad.
So if overmisting is bad, why is dunking OK?

When you overmist, pools of water begin to form on the surface of your casing. These pools of standing water are like resorts for contaminants.
However, when you dunk your casing, you should also give it ample time to drain off the excess water. This way you avoid pools of water from forming on top of the casing and in the bottom of your tub/tray/etc.

Be sure to Roll it afterwards. This helps maintain moisture and that is very important as is FAE

You don't roll a casing I thought you were talking about cakes. My bad. For the casing you drain the tray. It will rehydrate the casing since you loose a lot of water to fruits and evaporation. Once it is re hydrated, you would mist as needed. You don't want to have pools of water on the casing for a couple reasons: One it invites contams and 2 it could compresses the casing making it not as airy
