Is 60 Minutes Too Short To PC Rye Berries and Rye Seed?

I just realized that on RR's rye berry and rye seed teks he says to pc 90 minutes but I PC 12 jars 10 days ago some rye berries and some rye seed. They have all colonized and been shaken except one jar of seed which had some cob web.  I'm pretty confident that if I don't have any stalled jars except the one with cob web, and they are fully colonized then they should be OK right?

Now today I just finished PCing 4 jars of rgs for 75 minutes (I accidently left them on an extra 15 minutes)they are still in the pc.  Should I cook them for another 15 minutes at 15 psi or do you think they will be alright.

For now on I know that it should be 90 minutes but I was used to making cakes at 60 minutes.

Your colonized jars should be good, the extra time is to insure the jars are nice and sterile, so you don't waste your time with contamination issues!

I used to do just 15psi @ 60 min, now I do no less than 90 min. I have more success the longer they are being sterilized. You can get away with 60 or 75 min but like you said, they could stall from bacteria. At least IME thats the case with 50% of jars preped at 60 min!

so should I hit the jars in the pc for another go round or leave the be at the 75 minute mark.  They are still sitting in the pc unopened but it's cooled down now.  Will re-pressure cooking mess up my moisture in the jars of RGS?

Now that you have allowed the PC to cool, just let them be. Also, I have never PC for more than 60 minutes. I think what is most important here, is that you figure out what works best for you. If you see no differences in contamination rates between a 60 minute and 90 minute PC, than the extra 30 minutes is probably a waste of time for you. However, if you do see a significant difference, its obviously worth it to go the extra 30 minutes.
