Today's haul of Stinkhorns.

I picked my Chanterelle (Cantharellus cibarius) patch today and I know there are more. I am going back tomorrow to do a thorough inventory of the area and pick everything I missed today. Hopefully I will find some new patches.
Total weight wasn't much: 2 lb. 8.6 oz.

One thing I've noticed is the Chants from this area never seemed to get buggy. Today I figured out why. I never let them get old enough.
Believe it or not "...stinkhorns are edible. The "eggs" are even considered delicacies in some eastern countries."

I have found some white larvae in young chanties, but they do tend to be less buggy than most mushrooms. Older chants are buggier but thankfully not revoltingly so like elder oyster mushrooms

Maybe the area I pick in doesn't have a lot of fungal flies because the younger ones are always pristine.

I never find that many bugs in chants, only the larger ones but i dont take em if they are too buggy. Sum of the ones i eat have areas in them you can tell have had bugs(tunneling bugs)but i dont care if there not in there.

que rico Señor hongos! i never found bug on chanterrelle but instead in boletus oh man !. well extra protein is in all we eat after all . ha ha

excellent! You are going to be eating chanterelles with every meal for a few days. I'm running out of ideas and time to use up my finds -- plan to either sell off or give away the excess then cook and freeze the remainder.
How have you been preparing these mushrooms? surely there is a meal worth mentioning.

I only have one decent recipe that I keep using over and over again.
I make Rice-A-Roni Rice Pilaf and two Barbequed chicken breasts. I take a platter, cover it in pilaf and place the breasts in the center beside each other. I take the Chanterelles, sauteed them in butter and mix in a jar of apricot preserves and garnish the outside parameter of the platter with it making a a ring around the platter.
This year I might try sauteing them in butter and eating them with some sausage patties. I tried that with some Candy Caps, but it didn't turn out like I expected.
I don't usually eat these in season. I save them for the winter months when I am dreaming of mushrooms. I saute them in butter and freeze them.
This year I think I'll eat some fresh. Do you have a favorite recipe you'd like to share?

Saute 'em in butter and then put them under the cheese on Garlic-Cheese Bread.
I dry my chanterelles and use them for soups and stews, etc in the off-season. I guess its just my preference to dry everything instead of freezing or canning.
Last year, in Indiana me and a buddy found the motherload of Chanties for this area. At least 20lbs in a very small area, it took two trips. We filled our baskets, went back to the car and dumped em and went back. I got a little greedy and invaded a deer browsing shelter. I'm sure the DNR was pissed if they saw my tracks, but they won't count the chanterelles anyway.
Around these parts I find cibarius under White Oak and appalaciensis under American Beech. The appalaciensis are fragile, but they are perfectly fine. Try not to pick them right after it rains.
