Fluffy mycelium chunks

I birthed a few cakes right after they were fully colonized and put them in my fruiting chamber. They started to get these chunks of fluffy mycelium on the outside which I assume are hyphal knots. They have been in there for about a week now and still no pins. I was wondering if it's because it takes longer to pin or because I birthed them after they colonized for about 3 weeks and the mycelium isn't old enough to produce a fruit yet. Another thing I was wondering is that I still have 8 jars colonizing and should I wait longer after they are fully colonized(The whole outside of the cake is white) before I pop them out or will they be able to ward or contams as soon as the walls of the jar are all white.

You should have waited a week after full colonization prior to birthing.  They won't fruit sooner than that anyway, and leaving them in the jars prevents them from drying out during that week.

Chunks of fluffy mycelium are just that.  They're not hyphal knots, which are tiny, bright white dots about .5 mm in diameter. Hold off on birthing the rest of your cakes for a week, and then birth/dunk and roll.
