my suggestion, cold shock them, lower the temperature about 10 degrees for a day. should trick them into fruiting again
as far as drying time, eat them fresh, more potent anyway

I would also suggest a double ended casing on the cakes to make sure that they have enough water. Take some verm and soak it with water. Grab a fistfull of it and squeeze the excess water out of it. Layer this on both the top and bottom of the cake about 1/2" thick.
