Found these in the woods behind my house. Whens the best time too pick them only one appear mature(see pics)

I picked a few of the pins but there are about 7-9 more im gonna let grow. I was freaking out cuz yesterday when i found them i was unsure what they were but when i found out i had too go back. So this morning i went back and there was a bird poop next too the big one so i examined it too make sue none of the poop was on it then picked it as well as the two largest pins they were about 4-5 inches long. How long should i wait for the others too grow ive read they take a while too mature. I guess with the big one that was very close too the bird poop ill just have too wash it off before consuming it just too be safe.

ive waited months for tsugae to mature, but some mature faster than others. Just keep an eye on them. As far as consuming them they arent very tasty so i'd make tea out of them. Dry em out for about a week or 2. Ive also heard that consuming the mushroom body is no good for your liver or something.
