when i think about it dung juice in substrate jars is worthless. the reason why dung is pasteurized and not pressure cooked at 15 PSI is because we need to kill some of the microbes not all of them. so when the jars with the juice are sterilized all the nutrients are killed. am i wrong?

Actually, some of the nutrients might break down. Raw fruits and vegetables are supposed to be better for you than cooked or canned ones because some of the good stuff breaks down or leaches out in the cooking process. However, the dung water, even if sterilized, would still have more nutrients in it than spring, tap, or distilled water. I've read sterilized natural water (like pond water) works well, too.

You`ve just said that when vegetables are cooked some of the nutrients leech out, true.
But then that would mean that the nutrients leech out into the water? yep.
So ultimatelly you are saying exactly what we've said about the left over juice acting as nutrients for the new substrate.
The substrate absorbs the water and nutrients to supply to the mycelium.
