I have 4 cakes that have been in incubation for about 20 days now, and their about 90% colonized, but there is a lot of moisture in the jars and the cakes seem to be warping, or, they have indents in them?? anyone know why this is?

I think shrinkage is normal, I see the same thing with my cakes.

They shouldn't shrink before full colonization and birthing. Don't incubate. That's probably what's slowing down growth and causing problems. Colonize at normal room temperature and they'll be finished by day 20. Too many so-called 'teks' around here recommend 'incubating' for some silly reason, probably that incorrect figure of '86F is best for colonization' reported in a book from 20+ years ago. Incubating makes about as much sense as 'total darkness', and 'dropping humidity after pins form'. RR

Take them out. Normal room light as zero effect on colonizing mycelium, so it really doesn't matter. RR
