Just fill an empty Water Bottle or somthing with water, Put in freezer until frozen, then put in fruiting chamber.. Keep a few in the freezer so you can change them as you need them..

Turn down your AC. If you can't do that, cold shock your cakes overnight in the fridge before placing them in the fruiting chamber.

I believe the cakes could still pin, but I don't have experience with trying to fruit at those temperatures. I would think that a cold shock would be beneficial and would initiate pinning faster.

Dunking doesn't necessarily initiate pinning. It rehydrates the cake. Many people dunk in the fridge to reduce the chance of bacterial bloom and this combines a cold shock with the rehydration.

Any water pipes near by? wrap tubing aroud it. Ever some plain copper pipe or bar should help conduct some heat away from the tubing. Or a jug of water with the tubing piled inside would help maybe.
