Inconsistent pinning/fruiting of PF cakes

I have eleven PF Brf/verm cakes. They are all into the pinning/fruiting stage. The odd thing was one cake had one pin and started to grow and is almost ready to be picked.
All the other cakes are doing nothing at the moment, i keep checking for pins, just to make sure they are not somewhere i can usually see.
The temp is 70-75 RH is defiantly well over 95% the bottom is full of perlite It is fanned twice a day for 2 minutes each They have set out in jar for 4 days for 12/12 light cycle, (after that i read some more experienced grower post on how it wasnt necessary to pin in jar)then birthed them and it is now day 7. The light cycle is now 9 hours of light during the night (while i sleep) and dark the rest of the time. I would have a couple more hours, but people might notice it.
Two things i guess i didnt do which i should do is dunk them ( i was going to do it for the 2nd 3rd etc flushes) and i am a bit paranoid about misting. I read standing water destroys cakes once it sits for 48 hours, and when i mist (even when i point up 5 feet above and it gently falls down) it looks like water is going to be collecting too much, so i dab the excess with a paper towel. Which i havent been able to find through searching if i am royally screwing my grow up that way. The only thing i could fine was maybe fan a ton after misting to dry them up.
Anyway, i know it can take a long time to pin, that doesnt worry me too much, patience is important after all , but what does is the one cake that does have 1 shroom growing off of it has no other pins, so even for an early bloomer you would thing it would have pinned before having a mushroom almost fully grown.
Should i just keep looking at them and continue what i am doing, or should i just wait for that one to be ready, pick it, and dunk them even though they have been out of a jar for 7 days.

i usually pick my cakes when the first mushie breaks a veil. if its the only one, i pick it and dunk the cake for 12-16 hours and let it refruit, at which time it will have many more mushies. always dunking before your first flush will most likely improve your yields dramatically. dont stress man, patience is golden in this type of grow!

yeah i will give it to the weekend, pick the one, if the other's haven't pinned yet i will just dunk them all. It might help it all along a bit and at least make sure they are nice and juiced up. The incubation maybe made them a bit dry.
