Double-end casing tek vs. rolling?

Hi all,

what are the relative merits of double-end casing and rolling?

can anyone point me towards a good tek for double-end casing?

a double end casing tek has the same benefits as any casing method, just a little more of it. The benifits of a casing in my experience, include a greater number of flushes due to moisture retention, and maybe stronger fruit bodies. I would suggest reading up on the 50/50 + casing tek and just adding a bottom layer in addition to the top layer if thats what you want to do, i would go no more than a half inch depth on either side of the casing.. in regards to rolling, it is a method for cakes not casings but is relatively the same idea.. search

Yea, I was talking about double-end casing on brf cakes... but i think i will just roll them. gonna go do that now!
