Beer Making 101

Ingredients

Malt Extract

.Fermentable sugars derived from grain, 4 - 10 lbs. for five gallons.

.Specialty Grains add more character and depth to any style of beer. You can also extract the sugars from the barley yourself, from either base malts or specialty grains-ask us about All Grain Brewing.

Hops

.Flowers used for bitterness, flavor and aroma, also natural preservative.

.Come in pellets and whole leaf. Alpha acid indicates strength.

Yeast

.Active ingredient.-Converts fermentable sugars into alcohol and carbon dioxide

Liquid

.Best choice, flavor fine tuning, gives specific characteristics.

Dry

.Generic, will ferment anything, but will tend to be bread-like or yeasty

Water

.Tap is okay if you like its taste.

.Also available are Reverse Osmosis, Spring Water. (Pure water requires re-hardening, get Burton Water Salts.)

Sanitation

.Everything that may contact your beer post-boil must be sanitized. Not enough can be said about sanitation. Do not use bleach, no matter what you read or hear. It is ineffective against the bacterias most harmful to beer, acetobacters, which create vinegar. Use Star San or Iodphor iodine solution. Your hands are never sanitizable; neither is wood, nor most plastics. Replace your fermenters if they become scratched. Replace your racking tubing before it becomes discolored, every five or so batches.

.B-Brite cleanser

Bottles-

22oz. cs/12 30 bottles for 5 gal

16oz. cs/12 swing-top amber grolsch-style bottles - 40 bottles for 5 gal

32oz. cs/12 swing-top amber grolsch-style bottles - 19 bottles for 5 gal

Optional but recommended:

Carboys-five gal. glass jug-

Carboy handles and brushes

Jet Bottle Washer & adapter-

Floating Thermometer

Test Jar for hydrometer

10"Funnel and strainer

Bottle Drainer-90 bottle capacity

Bottle Sanitizer-fits onto bottle drainer

Process

Malt Extract Beers, Five Gallons

The Pre Boil Steep, or Making a Grain Tea, when any specialty grains will be used.

1-2 gallons H2O in stainless pot.

Bring temperature to 160F.

Put specialty grains into "hop bag," muslin or nylon.

Let steep for 20 minutes.

Remove bag(s) of grains.

The Boil (5 minutes for prehopped extracts, 60 minutes for unhopped extracts)

Grain Tea or 1-2 gallons H2O. Add malt extracts. Stir well, and bring to boil. As wort begins to boil, it will foam up. This is normal! Just don't let it boil over.
Set timer according to your recipe and your extracts! Begin your hop schedule/countdown.

45-60 min, add bittering hops.

15-45 min, add flavoring hops.

15 min, add Irish Moss to clarify.

0-15 min, add aroma hops, any other aromatics the recipe calls for. Remove from heat.

Cooling

If you do not have a copper immersion wort chiller, Fill your sink with ice water and set the boiling pot into the ice bath. Stir slowly for 15 minutes.

Primary Fermentation-always in sealed, alcohol-grade buckets. Never with a blow-off.

Place 2 gallons cool H2O in sanitized fermenter.

Add cooled wort and then add enough more cool H2O to get 5 1/2 gallons.

Aerate (stir) vigorously. Didn't I say vigorously? You're not done yet. Stir some more.

Take gravity reading (tests density of liquid) and write it down, adjust for temperature.

Pitch (add) yeast when temperature of wort is below 80F.

Store in cool dark place, check for bubbles every day.

Secondary Fermentation (Strongly recommended)

When airlock is bubbling less than 10x per minute, sanitize glass carboy and quietly rack (siphon) beer into carboy, leaving the sediment (that extra 1/2 gallon) behind.

This does many things for your beer:

*Gets beer off yeast sediment, which can impart off-flavors and aromas.

*Minimizes air space and surface area to prevent oxidation.

*Allows you to bottle when you have the time, instead of when the beer is finished.

Bottling

When airlock has stopped bubbling completely (0 bubbles in 3 minutes) and hydrometer is within bottling range. Bottlebrushes, Jet bottle washers, and bottle drying racks will all make this easier. After all bottles are sanitized, then take your priming sugar (dextrose, use 1 oz/gallon; maltose, use 11/2 - 2 oz/gal) and boil it on the stove with 1c. H20. Cool in an ice bath, and put in the bottom of the spigoted bottling bucket. Gently rack the beer from the carboy (or fermenting bucket) into the bottling bucket, where it will then mix evenly with the priming sugar. Stir gently, yes gently, and then begin to fill your bottles to within one inch of the top. Dip caps in sanitizer, crimp onto bottle. Store bottles at cellar temperature for 7 to 14 days. Chill and enjoy. Relax, have a homebrew!

well I dont have any home fermenting advice but I do have jail fermenting advice.
take a non preservative based juice add orange slices apple slice things like that then add super fresh bread. Fresh french bread works the best. seal up and keep it warm and burp it like 2 or 3 times a day and in like 2 weeks youll have jail jungle juice.

thats all I got and well I just know in my heart I make my parents proud

  • Pick up The Complete Joy of Homebrewing by Charlie Papazian. This should be your bible for brewing when first starting out. It will answer almost any question you have.
  • Go to your local homebrew shop. They will be more than willing to help ease you into the hobby. Homebrewers tend to be a very friendly and helpful lot, jut like mushroom cultivators.
  • Search for brewing specific forums. You'll find more information then you'll know what to do with.

If you have vinegar, then yes.  But that stuff is delicious on french fries (assuming it's malt-based).

I used to make wine and brandy like it was nothing when i was about 16. There is a hard way and an easy way to to make some really nice wine. Personally I like the easy way because I'm lazy!
1) go buy a gallon of 100% real grape juice (red,white,or regular) $5 @ wal-mart
2)buy a pack of balloons under $1
3)buy a pack of yeast (3 servings)$1-$2

now take and add half a pack of yeast to the grape juice and replace the cap with a balloon
and keep the temperatures above 70 and below 90 in 3 days add half a pack of yeast again and replace the old balloon with a fresh one. wait 3 more days add 1/4 of a pack of yeast replace the balloon and let it sit for a week or more.

now that your wine is finished you can make this into brandy!!!!
if you don't own  a still you can make a very simple and cheap one * take a pot, lid and a small bowl + a couple of rocks

now pour your wine in to the pot

center your bowl in the pot (floating on the wine)

place rocks(wash them) in the bowl until it sinks, make sure the wine dosn't over flow into the bowl

place Your lid upside down on the pot

turn on the stove on low and let it simmer for an hour

collect the liquid in the bowl into a bottle

(repeat about 3 to 6 times)

do not light a cigarette or anything around the still or it will explode  :whack:
